Crockpot Taco Stoup

I’m stealing Rachael Ray’s term “stoup” – thinner than a stew, thicker than a soup! If you like soup, add more water. If you are Stephen, or are married to Stephen, leave as is. As most soups, tastes even better the next day!

 

2 cans of kidney beans
2 cans of pinto beans
2 cans of corn (I only used 1)
1 large can of diced tomatoes
1 regular can Rotel (I don’t do spicy so I substituted plain diced tomatoes)
1 pkg taco seasoning
1 pkg ranch dressing mix (I’ll repeat: mix! The powder, not the dressing!)
1 lb. ground beef (I used venison)

Brown your meat. Drain the fat. Put the meat in your crockpot. Pour taco and ranch mixes in pot. Mix well. Drain and rinse all 4 cans of beans. Add those to the pot. Add entire cans of corn and tomatoes and Rotel — do not drain! Stir. Cover and cook on low about 8-10 hours. You can cook it on high for 4-5 hours. Serve with some shredded cheddar, a dollop of sour cream, and crushed tortilla chips.

I’m An Adult, Therefore I Roast

Only adults cook roast. Since I’m trying to convince myself that I’m an adult now, this seemed like a great step. I’m not very educated on the different types of roast. I just bought something on sale at Kroger that had the word “roast” in it. And then I found this recipe.

 

approx 3 lb. roast – bigger or smaller is fine, my Crock Pot could hardly handle this one
1 pkg ranch dressing seasoning mix
1/2 – 1 pkg Italian dressing seasoning mix
1 pkg brown gravy seasoning mix
1 c. water
veggies of choice

 I layered the bottom of my Crock Pot with halved red potatoes. Then put my roast on top. My roast was too long so I cut it in half, put the first half down, covered it in larges slices of onions, then put the other half on top. Then poured onions and carrots in. Sprinkled the mixed seasonings on top. Pour in water, add more if you want more drippings. I also added red wine… because, well, I like wine. You could also use the mixes as a dry rub if you’d like. Cook on low all day – I did mine about 9-10 hours. Save your drippings for gravy. The carrots are to die for!!

Soup-Hater’s Favorite Stew

Stephen hates soup so I try to stay away from anything broth-related. However, I figured I could trick him by using a lot of meat and potatoes in a stew. It was successful. This is the best stew we’ve ever tasted! We’ve had it twice in two months. The best part? Just throw it all in the crock pot!

 

2 lbs. stew meat
1 can condensed tomato soup
1 can cream of mushroom
1 pkg onion soup mix
1 c. red wine (we use Cowtown Red from D’Vine Wine; I’m certain that the wine makes all the difference so choose one you love)
veggies of choice (I used quartered red potatoes, baby carrots, onions, celery, and then at the end I throw in a can of drained green beans)

Put meat and veggies in your crock pot. I put the potatoes on the bottom. Mix soups and wine together (it’ll look nasty, don’t worry!) Sprinkle onion soup mix over meat and veggies. Pour soup mixture on top. Cook on low 8 hours. I leave it while I’m at work which ends up being about 9-10 hours and it’s perfect. Add some beef broth if you want to thin it out. Your mouth will water when you walk in the door and smell it! I promise!
